Crispy Air Fryer Potato Stacks + Sour Cream & Onion Dipping Sauce
There is nothing better than crispy, cheesy potatoes, and these Crispy Air Fryer Potato Stacks are just to die for! One weekend, my husband and I went to my family’s lake house with my dad. My dad has a habit of over buying groceries, so at the end of the weekend he sent us home with a massive bag of potatoes (is that a classic dad move, or just for my dad?). I had a Super Bowl party the next night, so I figured I would try to put them to use! I tested this recipe and it was a HIT. People kept asking me to send them the recipe they loved it so much! I knew I had to put this up on the blog after that.
The best way to make these is with a mandolin. Usually, I don’t love purchasing single use kitchen items. But the one I have has so many different attachments that I use it on a weekly basis. The mandolin helps you get perfectly thin and even slices without thinking twice about it. If you don’t one, you have you can also just use a good old knife and cutting board. Just go slow and cut with precision!
Another great thing about these Crispy Air Fryer Potato Stacks is that they are gluten free, and I use oil instead of butter to make it feel just a tad bit healthier. It doesn’t compromise the flavor but it does make me feel better about eating a whole plate of these myself! I also make a really yummy dipping sauce with just a few ingredients. It’s super easy to whip up while your potato stacks are cooking!

Crispy Air Fryer Potato Stacks
Ingredients
- 1 LB Russet Potatoes washed, not peeled
- 3 tbsp Olive Oil
- 1/3 cup Grated Parmesan Cheese
- 1 tsp Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1 tsp Italian Seasoning
Sour Cream + Onion Dipping Sauce
- 1 cup Sour Cream
- 1 tbsp Onion Juice I use Howard's brand.
- 1-2 Green onion finely sliced
- Salt + Pepper to Taste
Instructions
- Wash and use a mandolin to slice potatoes into roughly 3mm slices. If you don't have a mandolin, slice slowly and with precision to make thin slices. Pat potato slices to dry and place into a large mixing bowl.
- Add oil, seasonings and grated cheese to mixing bowl with potatoes and gently toss to combine.
- Lightly spray your air fryer basket and make individual stacks of potatoes, about 8-10 slices per stack. If not using a mandolin, this may be 6-8 slices per stack depending on thickness.
- Cook in Air Fryer at 375° for about 20-25 min, or until they are lightly browned and the edges are crispy.
- While the Potato Stacks are cooking, combine all sauce ingredients and mix to combine.
- Serve while warm and enjoy!
