Crispy Air Fryer Potato Stacks

Crispy on the outside, soft and melty on the inside and bursting with herby, cheesy flavor, these Crispy Air Fryer Potato Stacks are sure to be a hit at your next dinner party or get together!

Ingredients

  • 1 LB Russet Potatoes washed, not peeled
  • 3 tbsp Olive Oil
  • 1/3 cup Grated Parmesan Cheese
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Italian Seasoning

Sour Cream + Onion Dipping Sauce

  • 1 cup Sour Cream
  • 1 tbsp Onion Juice I use Howard's brand.
  • 1-2 Green onion finely sliced
  • Salt + Pepper to Taste

Instructions

  • Wash and use a mandolin to slice potatoes into roughly 3mm slices. If you don't have a mandolin, slice slowly and with precision to make thin slices. Pat potato slices to dry and place into a large mixing bowl.
  • Add oil, seasonings and grated cheese to mixing bowl with potatoes and gently toss to combine.
  • Lightly spray your air fryer basket and make individual stacks of potatoes, about 8-10 slices per stack. If not using a mandolin, this may be 6-8 slices per stack depending on thickness.
  • Cook in Air Fryer at 375° for about 20-25 min, or until they are lightly browned and the edges are crispy.
  • While the Potato Stacks are cooking, combine all sauce ingredients and mix to combine.
  • Serve while warm and enjoy!
