Ingredients
1LBRusset Potatoeswashed, not peeled
3tbspOlive Oil
1/3cupGrated Parmesan Cheese
1 tspSalt
1/2tspOnion Powder
1/2tspGarlic Powder
1tspItalian Seasoning
Sour Cream + Onion Dipping Sauce
1cupSour Cream
1tbspOnion JuiceI use Howard's brand.
1-2Green onionfinely sliced
Salt + Pepper to Taste
Instructions
Wash and use a mandolin to slice potatoes into roughly 3mm slices. If you don't have a mandolin, slice slowly and with precision to make thin slices. Pat potato slices to dry and place into a large mixing bowl.
Add oil, seasonings and grated cheese to mixing bowl with potatoes and gently toss to combine.
Lightly spray your air fryer basket and make individual stacks of potatoes, about 8-10 slices per stack. If not using a mandolin, this may be 6-8 slices per stack depending on thickness.
Cook in Air Fryer at 375° for about 20-25 min, or until they are lightly browned and the edges are crispy.
While the Potato Stacks are cooking, combine all sauce ingredients and mix to combine.
