Not Your Average Tuna Salad

Ingredients

Salad Ingredients

  • 2 Cups Lettuce or Salad Mix
  • 2, 7 oz Cans Albacore Tuna, drained
  • 1/4 cup Fresh Dill, finely chopped
  • 1/4 cup Fresh Parsley, finely chopped
  • 2 Green Onions, thinly sliced
  • 1 Persian Cucumber, finely diced
  • 2 stalks Celery, finely diced
  • 1/4 cup Kalamata Olives, finely sliced
  • 2 tbsp Capers
  • 4 oz. Non Fat Feta Cheese, crumbled

Dressing Ingredients

  • 1/3 cup Extra Virgin Olive Oil
  • 3 tbsp Lemon Juice, about 1-1.5 lemons
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Mint

Instructions

  • In a jar or a bowl, whisk together all salad dressing ingredients until well combined.
  • Add washed and dried lettuce to a large bowl.
  • Add tuna, dill, parsley, green onions, persian cucumber, celery, kalamata olives, capers and feta cheese.
  • Pour dressing on top of salad and toss gently until everything is well coated.
  • Top with additional feta cheese if desired and enjoy!
